Fattoria Estense use all of their skill and experience to produce this range of Balsamic Vinegar. Each Grade is blended to produce different levels of flavour, sweetness and viscosity.
Balsamic Vinegar is very versatile, perfect for use as a condiment for meat, fish, vegetables and cheese. Alternatively make your own dressings, marinades and dips. Also fantastic with strawberries and ice cream.

Summary of production process.
Grapes from the Trebbiano vineyards are are harvested at the peak of ripeness, immediately pressed and then the 'must' is left to ferment in open top barrels until it has reduced to two thirds its quantity. At this stage the must is described as 'cooked'. Next it is then put into oak barrels where it stands in the cool and dark 'attics'. Each year it is transferred into different barrels from which it draws different characteristics. During this time the balsamic gradually becomes sweeter and more syrupy.

This is a totally unique product produced exclusively by the Calogiuri family. It is a totally natural product containing only the 'cooked must' of 2 varieties of grapes, Negroamaro and Malvasia Nera, which has been aged in oak barrels for 4 years. It is described by Italian chefs as a sweet velvety vinegar with the subtle overtones of spices, grapes and plums.
Vincotto is extremely versatile, it can be used as a condiment with roasted meats, salads, vegetables and desserts such as ice-cream. A splash can be added to sauces and marinades for a little extra flavour, or serve with boiled meats to give them a richer flavour.
