Warm Pasta Salad with Olive Dressing - serves 4
For the olive dressing
2 cloves garlic, finely chopped
2 spring onions, finely chopped
25 green olives, stones removed,
finely chopped
3 lemons, juice only
handful fresh basil, chopped
1 ball mozzarella, cut into cubes
1 tbsp Extra Virgin Olive Oil
1 tbsp balsamic vinegar
salt and freshly ground black pepper
For the pasta
400g/15oz vermicelloni pasta, cooked
al dente, drained and kept warm
1 tbsp Extra Virgin Olive
Oil
Parmesan shavings
1. For the olive dressing, place all the ingedients into
a bowl, season with salt and freshly ground black pepper and mix well.
2. For the pasta, place the cooked vermicelloni into a bowl and stir in the
olive oil. Pour the dressing over the pasta and stir well.
3. Place the pasta salad in a large bowl, sprinkle with parmesan, and serve.
