Thai Mango Salad with roasted peanuts.

Salad
2 Mangoes - ripe but still firmish
1 Red Pepper
1 Yellow Pepper
1 Carrot
1 Red Onion
Mixed Lettuce Leaves
Slice all ingredients and place in large bowl, mix well.

Dressing
Grated Zest and juice of 1 Lime
1 tbsp Soy Sauce
1 tbsp Granulated Sugar
3 tbsp Roasted Peanut Oil
Freshly ground Salt and Pepper
Put all ingredients except salt and pepper together and whisk until sugar breaks down. Season to taste with salt and pepper.

Sprinkles
Chopped mint
Roasted Peanuts

To complete the salad pour over the dressing and then sprinkle over the mint and peanuts.
