Peas Puglia Style - Piselli alla pugliese

1.2kg Fresh Peas or 300g Frozen Peas
300g Pearl Onions
Parsley - handful
3 tbsp Extra Virgin Olive Oil
Stock
Salt


1. Pod the peas and place them in cold water.
2. Chop the parsley and slice the onions finely.
3. Put the olive oil into a casserole and heat, add the onions and after 10 minutes, the peas.
4. Adjust for salt, add the parsley and a glass of stock and cook gently for 20 minutes or until tender.
