Ideas for using infused oils
Liven up salad dressings.
Drizzle over pizzas, pasta dishes, soups and risottos.
Add to marinades for barbecued meat and fish, or simply drizzle over food immediately
afer grilling, roasting or barbecuing.
Transform simple grilled meat, fish or vegetables with a good slug of your favourite
infused oil.
More specific uses -
*Stir Lemon oil, chopped capers and finely chopped
tarragon or dill into ready-made mayonnaise and serve with fish.
*Toss raw, peeled tiger prawns with lemon juice, seasoning and a generous drizzle
of Chilli oil in an oven proof dish. Cook in a hot oven for
about 10 minutes until sizzling.
*Roast new potatoes (no need to peel) in Rosemary or Thyme
oil with garlic cloves and fresh herbs.
*Slash the skins of whole sardines or small sea bass, drizzle with Basil
oil, season, wrap in foil and bake or barbecue.
*Cut country-style bread into chunky cubes and fry in Basil, Chilli
or Garlic oil for adding to soups or salads.
*Brush sliced ciabatta with Basil oil before grilling and topping
with fresh tomatoes and torn fresh basil leaves.
*Fry an egg in Chilli oil and serve on top of sauteed spicy
potatoes or on a bacon and summer leaf salad.
*Mix together sliced feta or halloumi, sliced garlic, a pinch of red chillli
flakes and roughly chopped parsley. Cover with Lemon oil and
marinate for 24 hours before serving.
*Whizz a jar of drained peppers in the food processor with a good glug of Basil
oil for a tasty dip.
*Instant garlic bread, take slices of good quality crusty bread, generously
brush with Garlic oil and grill.
