Chocolate Risotto with Orange & Honey
Serves 2
Preparation under 30 mins. Cooking time 10 mins to 30 mins.
For the risotto
150ml/1/4pint double cream
3 tbsp cocoa powder
1 tbsp icing sugar
300ml/1/2pint milk
250g/9oz risotto rice (arborio or carnaroli)
1/2 orange, juice only
To serve
1 tbsp honey
2 tbsp Greek-style yoghurt
fresh mint leaves, to garnish
icing sugar, to dust
1. Place the cream, cocoa powder, icing sugar and milk into a lidded saucepan
and bring to the boil.
2. Add the rice, cover and cook for 15 minutes, stirring occasionally, or until
the rice is cooked. Stir in the orange juice and pour the risotto into serving
bowls.
3. To serve, drizzle with honey and top with a dollop of Greek-style yoghurt.
Garnish with mint leaves and dust with icing sugar.
