Penne All Arrabbiata
A delicious dish that comes with a tasty kick!
1 medium onion, finely chopped
1 garlic clove, finely chopped
1 red chilli roughly chopped
4oz pancetta, finely sliced
1 tbsp extra virgin olive oil
500g canned tomatoes, drained and chopped
Pinch of salt for seasoning
400g penne pasta
4 oz grated Parmigano
Tsp chopped fresh parsley to serve
- Heat the olive oil over a medium heat and add the onion, garlic and chilli
- Sauté until the garlic becomes golden in colour
- Add the chopped tomatoes and season with a pinch of salt
- Mix together thoroughly, cover with lid and simmer for 20- 25 minutes to reduce the sauce
- Meanwhile cook the pasta according to the instruction on the pack
- Drain the pasta, transfer to a warm bowl and pour over the sauce
- Sprinkle with chopped parsley and serve with Parmigano
