Moules Mariniers with Olive Oil
Moules Marinieres

Ingredients:
1 tbsp Di Molfetta extra virgin olive oil
2 shallots, finely
chopped
2 garlic cloves,
finely chopped
1 pint dry white wine
A few flat-leaf
parsley sprigs
2 kg fresh mussels,
washed
3 tbsp crème fraiche

Heat the
oil in a large saucepan and cook the shallots and the garlic for about 10 mins

Add the
wine and parsley, bring to the boil, then lower the heat and add the mussels
and put the lid on

Steam for
about 5 mins until all have opened (throw away any that have not opened)

Remove the
mussels from the cooking liquid reduce this liquid by half then add the crème
fraiche and season
5.
Put the
mussels in a bowl and pour over with the sauce and serve with crusty bread.
