Lodovico Campari Grade 15 Balsamic Vinegar
Lodovico Campari's balsamic vinegar is made only
from grapes picked only from Trebbiano vineyards. The grapes are pressed
immediately after they are picked and the must is then fermented in
open top barrels until it has reduced by two thirds. The cooked must is
then put into oak barrels and aged for up to 15 years. The vinegar is a rich,
strong brown colour and has a thick velvety texture. The flavour has hints of
chocolate, raisins, leather, wood, dried fruit, figs, and toasted malt. It has
a lingering finish that balances perfectly between sweetness, bitterness, and
acidity, making this vinegar perfect for drizzling onto the most robust of
dishes.
