Farfalle with Bacon and Peas
400g farfalle pasta
2 tbsp extra virgin olive oil
1 tbsp butter
4oz smoked streaky bacon
4 oz back bacon, chopped
8oz shelled peas (fresh, frozen or canned will do!)
400g canned tomatoes, drained and chopped
Pinch of salt and pepper
Generous pinch of dried oregano
Sprinkle of fresh oregano to finish
- Heat the oil and butter in a broad based pan, lightly fry the bacon until crisp
- Add the peas and tomatoes
- Season with salt and pepper and simmer until the peas are cooked
- Add the oregano and simmer for a further 5 minutes
- Cook the pasta according to packet instructions
- Remove from heat and serve with the pasta, sprinkle with fresh oregano and serve
