Banyuls Vinegar
Banyuls wine vinegar is made from one of France's
famous vins doux (sweet wine). The wine is harvested from grenache grapes that
grow in and around Banyuls-sur-mer. The vinegar is aged for six years in oak
casks and retains all the wine's qualities. Flavours include hints of nuts,
liquorice, coffee, orange peel, and vanilla. Banyuls wine vinegar is
a rival to both Italian balsamico and Spanish sherry vinegar. It's distinct nut
like qualities make it the perfect companion for vinaigrettes made with
hazelnut or walnut oils, as well as high-quality olive oils ... and when you're in
the mood for something really special, use it as a marinade for fish.
