Balsamic Vinegar Chocolate Cake

Ingredients:
1 tbsp butter
100g cocoa powder
350g plain flour
2 tspn baking soda
¼ tspn salt
350g caster sugar
300ml warm water
250ml Di Molfetta extra virgin olive oil
2tbsp Il Borgo del Balsamico yellow label
1tbsp white wine
vinegar
Icing sugar (for
dusting)

Butter a
24cm loose-bottomed, deep spring clip cake tin. Dust well with a little of the
cocoa powder until coated all over

Pre heat the
oven to 180c/350f gas mark 4

Sieve the
remaining cocoa, the flour, baking soda and salt into a mixing bowl. Add the
caster sugar and stir well

Now mix
the warm water and oil together in a mixing jug. Whisk the liquid, in a steady
stream into the dry ingredients to make a dense, dark batter

Now stir
in the vinegars and beat thoroughly
6.
Pour the
cake batter into the cake tin, and place
in the centre of the oven and bake for 30 – 40 mins
7.
The edges
will be firm but the centre still damp,
turn the oven off and leave the cake in the still hot oven for 10 more mins
8.
Remove
from the oven and leave to stand for 30 mins still in the tin, then remove and dust
with icing sugar and serve
9.
Store in
an airtight container in the fridge, it keeps well
